Kale Chips
This recipe is so easy and delicious! And quite addicting.
1. Preheat oven to 400°. Separate leaves of 1 bunch kale from stems. Wash thoroughly and tear into bite-sized pieces. Drizzle with olive oil and a dash of sea salt and black pepper. Mix kale with your hands thoroughly.
2. Spread on a single layer and bake until slightly crispy (about 15 minutes). Turn approximately every 5 minutes, to keep from burning.
Soba Noodle Salad: Prepare soba noodles according to package. Create a dressing with peanut butter, a dash of rice vinegar, a dash of honey, and olive oil. Whisk thoroughly and sprinkle with sesame seeds!
Carrot Veggie Burgers
This recipe is from a great book that Phil got me for Christmas, called Color Me Vegan from Colleen Patrick-Goudreau... the writer of the Joy of Vegan Baking. I've only tried a few recipes, but so far so good! I modified this recipe a bit, but will post a recipe next time!
