Ingredients:
Nonstick cooking spray
6 cups popped popcorn (1 bag)
2 cups chopped pretzels
1 cup sugar
coarse salt
2/3 cup almond milk
1 cup mini marshmellows
Directions:
Spray an 8" x 8" square baking dish with cooking spray. Toss together popcorn and pretzels.
In a medium saucepan, bring sugar, 1/2 tsp salt and 1/4 cup water to a boil over medium high heat. Mix until sugar is dissolved. Allow mixture to boil for about 8 minutes. (I know it seems like a long time, but it's fine!) Remove pan from heat and add almond milk slowly. Immediately add marshmellows and mix until melted. This will take a minute.
Pour sugar mixture over popcorn and pretzels. Stir thoroughly, but quickly, until mixture is evenly combined. Add popcorn mixture to baking dish and spread evenly with a spatula. Cover with plastic wrap and press into dish. Sprinkle with coarse salt. Allow bars to completely cool before cutting apart!
