I brought these beets back from my trip to New York, and they are beautiful! I made them into some little puff pastry tarts.

Puff pastry with layered beets and apples, topped with a sprinkle of cheddar. Oven roasted tomatoes (recipe ala my grandma!). Raw corn salad (corn, scallions, mustard, oil, lemon juice).
